Seeing as how coming down with COVID-19 can render you unable to cook much less go to the store, assuming you can breathe, we're all going to need some ready-to-eat meals. As far as carbs & protein go, I've got beans & rice, which I eat regularly for lunch and will have to replenish in about two weeks, and freeze-dried camping meals, a fantastic disaster preparedness suggestion from
leenerella.
But what of fruits & vegetables? My local supermarket has restricted frozen food purchases to two of the same item per customer, so you know what that means: buy the fresh stuff and dehydrate it. So far I've done four bunches of kale*, six big Honeycrisp apples (Even better dried!), a pound of strawberries, and a big bunch of bananas. I think I'm ready for a couple of weeks of being shut into the devil girl pad.
Luckily for me, I have an emergency backup kid who could deliver things in a pinch. Seeing how he lives and works at the other end of long, narrow Seattle, though, that's not an option that I will exercise lightly. Oh by the way, he's a Hero of Socialist Groceries at a big, busy supermarket, so he's at reasonably high risk of exposure himself. I try not to think too much about the implications of that.
